Food for thought

By no means am a girl who knows her way around the kitchen.

I do have a few notches under my belt though. My conquests have included Spaghetti, Lasagna, Baked Ziti, Chicken Alfredo, Shepard's Pie and Tacos. But, my boyfriend is getting sick of eating the same dishes over and over.

Fast forward to 2011,  I think I'm a chef. Isn't that what Pinterest has done to us all, Ladies?

Problem is, I'm probably the pickiest eater out of anyone I know. I don't like cheese, seafood (minus shrimp), onions, peppers, mushrooms, cooked carrots or tomatoes, and the list goes on. As I'm sure you can see, my options are limited.

My first attempt at something 'daring' was this 
Creamy Lemon & Chive Farfalle Pasta. I added chicken to mine and it was a huge success!

We went to the Magic game last night (& no, I do not want to talk about the shot that left JJ's hand 1/10 of a second late which would have won the game for us in the last second of  overtime.) 

All in all, it was still a fun game and we had a good time :)

Anyway, I ate a basket of chicken fingers and fries, 3 beers and cinnamon roasted cashews. Way to stray from my 'diet'. I need to get back on track after this weekend and last night.

Tonight I'm cooking dinner & I'm trying to figure out which chicken to make. Both look incredibly delicious, so this decision is a hard one.

Option A. Parmigiano Panko Herb Encrusted Chicken Breasts
-OR-

Option B. Baked Parmesan Garlic Chicken

Whatever I decide, I'll be sure to keep you updated on how it turned out :)

The other day, Kristen posted this fab looking dish that I'm hoping to try out sometime next week.

Tomato & Spinach Tortellini
I'll have to pick around the Tomatoes because I don't want to leave them out and lose some of the flavor.

I would also love to attempt something totally unlike me & give these Baked Southwestern Egg Rolls a whirl. 

Any fun recipes that you might have, send them my way. I'm thinking of creating a recipe book for everything I want to try.

  1. Hopefully you like the tortellini, it is SO good. And I also used to have a strong dislike for tomatoes buy the dish is really good with them.

    Can't wait to hear which chicken you make, both sound delicious!
